Still, on oatmeal and today, we tried it with roasted flaxseeds. Roasted flax tastes more nutty-like. You can roast or just grind and use as is depending on how much time you have, we just like to be more adventurous in the kitchen. So here is what you will need;
Ingredients
- 2 tbsp of Flaxseed - plain or roasted
- 2 cups instant oatmeal
- 1 cup of Coconut Milk - unsweetened
- 1tbsp Butter
- Blueberries or fruits of choice
- Cinnamon, optional
- Honey, optional
Preparation
Mix ground flaxseed, coconut milk and oatmeal in a small pan that can hold up to 2 cups of liquid. Cook for 30-45 seconds or just until the mixture starts to boil. Turn off your stove and allow it to cool for a minute.
Add butter, cinnamon, blueberries, and honey. Stir to coat blueberries. Over-stirring will make porridge gummy.
Note: You can also use a microwave for this.
