Chia pudding is a great diabetes breakfast: it has little impact on blood sugar, filling, takes less than 30 minutes to make, no cooking required. What you will need;
1/2 cup coconut (almond or what you prefer)
1/4 cup Chia seeds
1/2-1 tsp cocoa powder
1 tsp vanilla extract
1 cup frozen mixed berries
Dash of cinnamon and salt
Combine the seeds and the liquid, stir for about 60 seconds, and then let it sit for 20 minutes. The seeds will soak up the liquid and make a pudding-like gel. You can make it even more interesting by adding your favorite nuts and fruits. Try it; let us know what you think.
