Chia seeds add a healthy nutritional pack and a little added crunch here and there. Chia seeds contain omega 3 and it’s a complete plant-based protein. Adding lemon zest will make your pancakes more flavorful. Use as many as 2 lemons for the zest, depending on the number of people you are cooking for or simply for the love of lemon flavor. Add a teaspoon of lemon extract to your batter for an extra pop. Here is what you will need;

- 1 cup whole wheat or flour of choice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of mineral salt
- 1 tablespoon sugar
- 3 tablespoons Chia seeds
- 1 cup of coconut milk
- Lemon zest 1 – 2 lemons
- 1 teaspoon vanilla (optional)
- Coconut oil, for greasing
Preparation;
Mix Coconut milk and lemon, set aside. This allows them time to mingle.
Mix the flour, baking powder, baking soda, sugar, salt and Chia seeds in a large mixing bowl, give it a good stir until everything comes together.
Add Coconut milk and lemon zest, mix well.
Preheat cooking pan.
Add oil to a pan, pour your batter on to the pan (use a measuring cup for scooping batter,)
Cook for 2-3 minutes (per side) or until bubbles form on top or edges, and flip. Repeat until you are done with your mixture. Serve with strawberries (or other berries of choice) and pure maple syrup.
