Flaxseeds are a superfood with a number of health benefits ranging from lowering cholesterol to cancer prevention. To get the maximum health benefits of flax, grind them before adding them to your drinks, soups or baking mix. Ground, flaxseed meal should be refrigerated for up to days 7 before it goes bad. Here now is one of my go-to flaxseed recipe; butternut soup with flaxseeds.
What you will need;
- 2 tablespoons olive oil
- 2 tablespoons ground flaxseeds
- 2 tablespoons butter
- 1 medium onion diced
- 1 tsp crushed garlic cloves
- 1 kg cubed butternut squash
- 5 cups broth or stock (chicken or bone broth)
- 1 cup coconut milk or cream (optional)
Directions
Wash and cut your butternut into cubes (Remove the skin and the seeds)
Add 2 tablespoons of olive oil to your cooking pan, add diced onion and garlic. Sauté for a minute then add your chicken broth.
Bring this to a boil then add your diced butternut cubes. Let it this simmer for 10 minutes or until soft. You can use a fork to confirm.
Turn off the stove and then pour into a blender add coconut milk and blend until you get a smooth consistency.
Put it back on the stove and then add your butter and let it simmer for 2 minutes then turn off your stove.
Serve in a bowl then add your ground flaxseeds. Stir to mix it all up.
