Millet porridge with Chia Seed is a light, nutritious breakfast to get you started for the day. Millet is also called Wimbi in Swahili. It is a whole grain seed that is ground into flour used to make porridge.
Mum would make millet porridge every day in the evening when we were young, but of course, back then we didn’t know anything about Superfoods. Chia seeds are a super nutritious seed to include in your diet, whether for breakfast, lunch or dinner. Here is mama’s millet porridge recipe, but with some Chia goodness
INGREDIENTS
- 1 a cup of millet flour
- 2 teaspoon Chia Seeds
- 1 teaspoon sugar or honey
- 6 cup of water
- 1 a cup of milk (optional)
INSTRUCTIONS
Mix 1 cup of millet flour and 6 cups of water in a medium-size saucepan
Mix thoroughly using your wooden cooking stick.
Place on the stove on medium heat and bring to a boil.
Make sure to stir the porridge as it boils to avoid lumps. As the porridge starts to bubble, add milk and stir.
Allow 2-3 minutes for the milk to cook.
Add 1/4 cup of sugar and stir to mix everything together. You can use honey instead.
Finally, add 2 tablespoons of Chia Seeds. Stir for a minute to mix it up then turn the heat off, leave on the stove for additional 10 minutes then serve.
